- Preheat your oven to 400°F (200°C) and warm up a rimmed baking sheet inside.
- In a large bowl, combine sliced bell peppers and onion with vegetable oil and toss until coated. Spread evenly on the baking sheet and bake for about 8 minutes.
- In the same bowl, add thinly sliced chicken with remaining oil and spices. Toss until the chicken is well coated.
- Remove the baking sheet from the oven and drain excess liquid from veggies. Add seasoned chicken, spreading out evenly.
- Bake for 15 to 20 minutes until chicken is cooked through and veggies are tender.
- Squeeze fresh lime juice over the fajitas before serving.
