Ingredients
  

For the Chicken and Veggies
  • 1 tablespoon Vegetable Oil Can substitute with grapeseed or avocado oil
  • 3 cups Bell Peppers Mix of red, yellow, and green for variety
  • 1 medium Yellow Onion Can be replaced with red onion
  • 1 pound Chicken Breasts Thinly slice against the grain
For the Spices
  • 1 tablespoon Chili Powder Adjust for milder flavor
  • 1 teaspoon Cumin Essential for Tex-Mex taste
  • 1 teaspoon Garlic Powder Fresh garlic can also be used
  • 1 teaspoon Kosher Sea Salt Regular salt can be used but may require less
  • 1/2 teaspoon Ground Black Pepper
  • 1 teaspoon Paprika Smoked paprika enhances flavor
  • 1 teaspoon Coriander Substitute with lemon zest if unavailable
  • 1/4 teaspoon Chili Flakes Optional for added spice
For Serving
  • 1 medium Fresh Lime Essential for finishing touch

Method
 

Directions
  1. Preheat your oven to 400°F (200°C) and warm up a rimmed baking sheet inside.
  2. In a large bowl, combine sliced bell peppers and onion with vegetable oil and toss until coated. Spread evenly on the baking sheet and bake for about 8 minutes.
  3. In the same bowl, add thinly sliced chicken with remaining oil and spices. Toss until the chicken is well coated.
  4. Remove the baking sheet from the oven and drain excess liquid from veggies. Add seasoned chicken, spreading out evenly.
  5. Bake for 15 to 20 minutes until chicken is cooked through and veggies are tender.
  6. Squeeze fresh lime juice over the fajitas before serving.
