Step-by-Step Instructions for Slow Cooker Cabbage Roll Soup
  1. In a skillet over medium heat, cook 1 pound of ground beef until fully browned, about 6-8 minutes. Drain excess fat and transfer meat into your slow cooker.
  2. Add 1 chopped onion, 4 cups of chopped cabbage, 1 cup of green beans, 1 cup of chopped celery, and 1 chopped bell pepper into the slow cooker. Then pour in 2 cans of diced tomatoes and 2 tablespoons of tomato paste.
  3. Sprinkle in 2 teaspoons of Italian seasoning, along with salt and pepper to taste. Stir well to ensure the rich seasonings coat the ingredients evenly.
  4. Cover the slow cooker and set it to cook on high for 4 hours or low for 7-8 hours.
  5. In the final 15-20 minutes of cooking, stir in 1 cup of uncooked minute rice, ensuring it’s well distributed throughout the soup.
  6. Once everything is cooked through, feel free to adjust the consistency by adding more broth if necessary. Stir gently.
  7. Ladle the soup into bowls and serve hot. Pair it with crusty bread or biscuits for a classic experience.
