  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste
For the Rice
  • 1 cup Jasmine or Basmati Rice
  • 1.5 cups Water

Step-by-Step Instructions
  1. Prepare the marinade by whisking together chicken broth, juice and zest from lemons, olive oil, thyme, rosemary, salt, and pepper.
  2. Coat the chicken breasts in the marinade and place in the slow cooker.
  3. Cook the chicken on low for 6–7 hours or high for 3–4 hours until it reaches 165°F and shreds easily.
  4. Rinse the rice under cold water; combine with water and a pinch of salt in a pot, bring to a boil, then simmer for about 15 minutes.
  5. Fluff the rice, serve with chicken, and garnish with parsley.
