Step‑by‑Step Instructions
  1. Begin by slicing the onions, garlic, and bell peppers, setting them aside for easy layering. Season the chicken thighs liberally with salt and pepper.
  2. Pour olive oil into the bottom of your slow cooker. Then, add half of the sliced onions, minced garlic, and bell peppers.
  3. Place the seasoned chicken thighs over the vegetable layer. Sprinkle dried oregano, thyme, rosemary, and red pepper flakes over the chicken.
  4. Layer the remaining sliced onions, bell peppers, Kalamata olives, and diced tomatoes over the chicken thighs.
  5. Pour in the chicken broth and lemon juice to add moisture.
  6. Cover your slow cooker and set it to cook on low for 7-8 hours or high for 4 hours.
  7. Once cooked, gently stir the contents of the slow cooker to blend the flavors.
