  • 3 cloves Garlic (chopped) Fresh garlic is best.
  • 1 tablespoon Ginger (grated) Adds warmth and spicy sweetness.
For the Garnish
  • 1/4 cup Cilantro (chopped) Parsley can be substituted if preferred.
  • 1/4 cup Basil (preferably Thai basil, chopped) Regular basil is a suitable alternative.

Step-by-Step Instructions
  1. In your slow cooker, add the boneless skinless chicken, coconut milk, curry powder, fish sauce, lime juice, coconut sugar, diced onion, jalapeño, chopped garlic, and grated ginger. Stir well to ensure all the ingredients are evenly coated.
  2. Secure the lid on your slow cooker and set it to low for 8 hours or high for 3 hours.
  3. Once the cooking time is complete, carefully remove the lid and shred the chicken directly in the slow cooker.
  4. Stir in the chopped cilantro and Thai basil just before serving.
  5. Scoop generous portions over your favorite base like cauliflower rice, basmati rice, or naan.
