- Season chicken breasts with salt and pepper. Heat butter or olive oil in a large skillet over medium-high heat. Sear chicken for about 6-7 minutes on each side, until golden brown and cooked through. Remove from skillet.

 - In the same skillet, add chopped onions and minced garlic, sautéing for 3-4 minutes until translucent. Stir in spinach and cook until wilted. Add cream and cook until thickened.

 - Preheat oven to 350°F. In a greased baking dish, layer cooked chicken, creamy spinach mixture, crumbled bacon, and top with Pepper Jack cheese.

 - Bake for 20-25 minutes until cheese is melted and bubbly. Allow to sit for 5 minutes before serving.

 - Serve warm, garnished with fresh herbs if desired.
