  • 1 teaspoon alcohol-free vanilla
  • 1 to 1.5 cups fresh peaches peeled and diced, or thawed frozen peaches
  • vegetable oil for frying heat to around 350°F

  • optional glaze mix of powdered sugar, milk, and vanilla for drizzling

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the dry ingredients.
  2. In a separate bowl, combine the wet ingredients and whisk until smooth.
  3. Gently fold the wet ingredients into the dry mixture until just combined.
  4. Add diced fresh peaches to the batter and fold them in gently.
  5. Heat about 2 inches of vegetable oil to 350°F in a deep skillet.
  6. Carefully drop spoonfuls of the batter into the hot oil, frying for 3-4 minutes until golden brown.
  7. Remove fritters with a slotted spoon and drain on paper towels.
