Step-by-Step Instructions
- In a large mixing bowl, combine minced garlic, fish sauce, oyster sauce, brown sugar, ground turmeric, and white pepper. Stir until the brown sugar dissolves and creates a cohesive marinade.
- Add the chicken thighs to the marinade, ensuring each piece is well-coated. Massage the marinade into the chicken.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 3 hours, ideally overnight.
- Preheat your oven to 180°C (350°F). This ensures even cooking.
- Line a baking tray with parchment paper. Arrange marinated chicken thighs skin-side up and pour any leftover marinade over them.
- Bake the chicken for 40 minutes, basting at the 30-minute mark.
- Raise the oven temperature to 200°C (390°F) and bake for another 10 minutes to crisp the skin.
- Remove from the oven and let the chicken rest for approximately 3 minutes before serving.

Notes
For best results, marinate the chicken overnight for enhanced flavor. Keep the bones in for moister meat and baste halfway through baking for a glossy finish.
