Step-by-Step Instructions for Spanish Chicken Skewers
  1. In a mixing bowl, combine natural yogurt, lemon juice, olive oil, minced garlic, cayenne pepper, Ñora pepper, white pepper, ground cumin, smoked paprika, and salt. Whisk until smooth. Add the chicken breast, ensuring it’s coated evenly in the marinade. Cover and refrigerate for at least 30 minutes.
  2. Once marinated, cut the chicken into bite-sized pieces. Alternate threading the chicken and bell pepper chunks onto skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  3. Preheat your grill to medium heat (around 350°F/175°C). Ensure the coals are glowing if using a charcoal grill.
  4. Place the skewers on the hot grill. Grill for approximately 10-12 minutes, turning frequently to ensure even cooking. Cook until the chicken is thoroughly cooked through, golden brown and lightly charred on the edges.
  5. Remove the skewers from the grill and let them rest for a few minutes. Serve over a fresh bed of crisp lettuce and drizzle with fresh lemon juice.
