  • 1/4 cup Fresh Mint or Cilantro Optional; skip if preferred or exchange for parsley.

Equipment

  • mixing bowl
  • whisk
  • spatula
  • Microwave
  • Non-stick pan

Method

Preparation Steps
  1. In a mixing bowl, combine the shredded slaw mix with rice vinegar, sugar, and salt. Toss everything together until the slaw is well-coated. Let this sit for about 15 minutes at room temperature.
  2. In a separate bowl, whisk together the light mayonnaise, Greek yogurt, sweet chili sauce, sriracha, and honey, if using. Mix until the sauce is smooth and creamy.
  3. Add the shredded cooked chicken to the prepared bang bang sauce. Using a spatula, gently fold the chicken into the sauce until it's entirely coated.
  4. Warm the large tortillas or wraps in the microwave for about 10 seconds or place them in a dry, non-stick pan over low heat for a minute on each side.
  5. Lay the warmed wrap flat on a clean surface. Spoon a generous portion of the bang bang chicken mixture along the center of the wrap.
  6. Add a handful of the quick pickled slaw over the chicken mixture, followed by a sprinkle of crispy shallots and sliced green onions.
  7. Roll the wrap burrito-style or fold it taco-style, tucking in the sides as you go. Serve immediately.

Notes

For the best texture, assemble wraps right before serving. Store chicken and slaw separately to avoid sogginess. Meal prep chicken and slaw in advance for maximum freshness.
