- In a cast iron skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering, about 2 minutes. Season steak with salt and place in the skillet. Sear each side for approximately 3.5 minutes for medium-rare, until beautifully browned and reaches 130°F.
- Remove the steak from the skillet and wrap it in aluminum foil. Allow it to rest for 5-10 minutes.
- Lower heat and add ½ cup of dry white wine to deglaze the skillet. Scrape up browned bits and simmer for 2-3 minutes. Stir in 2 tablespoons of butter and ½ cup of cream until melted.
- Gradually mix in 1 cup of shredded Swiss or Gruyere cheese and ½ cup of Gorgonzola cheese crumbles until fully melted and smooth, about 3-4 minutes. Add in chopped chives if desired.
- Slice the rested steak into bite-sized pieces. Layer thick-cut potato chips on a large platter, scatter the steak pieces, and drizzle the Gorgonzola cheese sauce over the top.
- Garnish with chopped green onions and serve hot to enjoy the contrast of crunchy chips, tender steak, and creamy sauce.
