Equipment

Method

Step-by-Step Instructions
  1. In a cast iron skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering, about 2 minutes. Season steak with salt and place in the skillet. Sear each side for approximately 3.5 minutes for medium-rare, until beautifully browned and reaches 130°F.
  2. Remove the steak from the skillet and wrap it in aluminum foil. Allow it to rest for 5-10 minutes.
  3. Lower heat and add ½ cup of dry white wine to deglaze the skillet. Scrape up browned bits and simmer for 2-3 minutes. Stir in 2 tablespoons of butter and ½ cup of cream until melted.
  4. Gradually mix in 1 cup of shredded Swiss or Gruyere cheese and ½ cup of Gorgonzola cheese crumbles until fully melted and smooth, about 3-4 minutes. Add in chopped chives if desired.
  5. Slice the rested steak into bite-sized pieces. Layer thick-cut potato chips on a large platter, scatter the steak pieces, and drizzle the Gorgonzola cheese sauce over the top.
  6. Garnish with chopped green onions and serve hot to enjoy the contrast of crunchy chips, tender steak, and creamy sauce.
