  • 2/3 cup quinoa can use pre-cooked for convenience
  • 1 cup strawberries fresh and sweet, best in season
  • 1 medium cucumber adds crunch, can substitute with bell peppers
  • 1 cup cherry tomatoes can swap with diced regular tomatoes
  • 1 handful mint provides freshness, replace with basil if desired
  • 1 bunch parsley flat-leaf enhances flavor, can swap with cilantro
For the Dressing
  • 1 tablespoon lemon juice freshly squeezed recommended
  • 2 tablespoons olive oil can substitute with avocado oil
  • 1/2 cup feta cheese omit for vegan option
  • to taste salt necessary for flavor enhancement
  • to taste black pepper necessary for flavor enhancement

Method
 

Preparation Steps
  1. Rinse quinoa under cold water and combine with water in saucepan. Bring to boil, then reduce to low, cover, and simmer for about 15 minutes until water is absorbed.
  2. While quinoa cooks, wash and chop strawberries, cucumber, and cherry tomatoes. Add to a large mixing bowl.
  3. Finely chop mint and parsley, then add to mixing bowl with other ingredients.
  4. Once quinoa is cooled, add to the mixing bowl. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently to combine.
  5. Chill salad in the refrigerator for about 1 hour to allow flavors to meld.
  6. Before serving, crumble feta cheese over salad and toss gently. Serve cold.
