  • 1 cup Feta Cheese sheep's feta preferred
  • 1 cup Roasted Red Peppers can substitute with sun-dried tomatoes
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Paprika smoked paprika for depth
  • 0.5 teaspoon Cayenne Pepper optional
  • 0.5 cup Parmesan Cheese freshly grated

Step-By-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Place fresh salmon fillets skin-side down on the baking sheet and slice each piece lengthwise to create a pocket.
  3. Brush the salmon with olive oil and season with salt and pepper.
  4. In a medium pan, heat olive oil and sauté spinach with Italian seasoning, paprika, cayenne pepper, and salt. Sauté for about 2 minutes until wilted.
  5. Mix in the roasted red peppers, feta cheese, and grated Parmesan with the sautéed spinach.
  6. Fill each salmon pocket with the spinach-feta mixture.
  7. Bake the salmon for 12-17 minutes until it turns opaque and flakes easily with a fork.
  8. Let the salmon rest for a few minutes before serving alongside your favorite sides.
