Baking Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, cream together the shortening, butter, brown sugar, and granulated sugar with an electric mixer on medium speed for about 2 minutes.
- Add the eggs one at a time, mixing until fully incorporated.
- Gradually add the flour, baking soda, and salt to the wet mixture. Mix on low speed until just combined.
- Gently fold in chopped peanuts if using.
- Scoop the dough onto a baking sheet lined with parchment paper, spacing each scoop about 2 inches apart.
- Bake for 11 minutes or until edges are lightly golden.
- Cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
