Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and tools.
  2. In a bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Marinate the chicken thighs for at least 15 minutes.
  3. Peel and chop the russet potatoes into chunks. Place them in a pot, cover with salted water, and bring to a boil. Cook for 15-20 minutes until fork-tender.
  4. Drain the potatoes and return them to the pot. Add milk, unsalted butter, and smoked gouda cheese, then mash until creamy.
  5. Transfer the marinated chicken thighs skin-side up to the baking dish. Bake for 25-30 minutes, until fully cooked.
