Method
 

Preparation
  1. Wash the cucumbers thoroughly and trim off the blossom ends. Slice them into coins or spears, aiming for uniform thickness of about 1/4 inch.
  2. Slice the sweet yellow onions thinly and set aside.
  3. In a medium saucepan, combine equal parts white vinegar and apple cider vinegar with water. Add sugar, salt, mustard seeds, celery seeds, crushed red pepper flakes, and garlic. Heat over medium-high until boiling, stirring until sugar and salt dissolve. Remove from heat and let cool slightly.
  4. Pack the sliced cucumbers and onions tightly into sterilized jars, leaving about half an inch of space at the top.
  5. Pour the warm brine over the packed cucumbers and onions, ensuring they are completely submerged. Seal jars tightly.
  6. Allow jars to cool on the countertop for about 30 minutes, then refrigerate. Let them sit for at least 24 hours before enjoying.
  7. Enjoy the pickles, which can be stored for up to two months.
