Preparation
- Wash the cucumbers thoroughly and trim off the blossom ends. Slice them into coins or spears, aiming for uniform thickness of about 1/4 inch.
- Slice the sweet yellow onions thinly and set aside.
- In a medium saucepan, combine equal parts white vinegar and apple cider vinegar with water. Add sugar, salt, mustard seeds, celery seeds, crushed red pepper flakes, and garlic. Heat over medium-high until boiling, stirring until sugar and salt dissolve. Remove from heat and let cool slightly.
- Pack the sliced cucumbers and onions tightly into sterilized jars, leaving about half an inch of space at the top.
- Pour the warm brine over the packed cucumbers and onions, ensuring they are completely submerged. Seal jars tightly.
- Allow jars to cool on the countertop for about 30 minutes, then refrigerate. Let them sit for at least 24 hours before enjoying.
- Enjoy the pickles, which can be stored for up to two months.
