Step-by-Step Instructions
  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5-10 minutes until frothy.
  2. Stir in all-purpose flour, salt, and olive oil until a shaggy dough forms.
  3. Transfer the dough onto a floured surface and knead for about 8 to 10 minutes until smooth and elastic.
  4. Place kneaded dough into a greased bowl, cover, and let rise in a warm area for about 1 hour until doubled in size.
  5. Mix cinnamon and brown sugar in a small bowl and set aside for the filling.
  6. Punch down the risen dough, roll it out into a rectangle, and sprinkle the cinnamon sugar mixture evenly over it.
  7. Roll the dough tightly into a log, slice into pieces, and arrange in a greased baking pan.
  8. Cover and let the dough slices rise for another 30 minutes.
  9. Preheat your oven to 375°F (190°C) and bake for about 25 minutes until golden brown.
  10. Let cool for about 10 minutes in the pan before transferring to a wire rack to cool slightly.
