Steps to Prepare
  1. Begin by mashing the bananas in a mixing bowl until smooth.
  2. Combine mashed bananas with granulated sugar, carnation milk, egg, kosher salt, baking soda, nutmeg, vanilla extract, and almond extract. Whisk until smooth.
  3. Gradually fold in all-purpose flour until the batter is similar to pancake mix, being careful not to overmix.
  4. Heat oil in a large frying pan over medium heat until it reaches between 325°F and 350°F.
  5. Drop spoonfuls of batter into the hot oil, frying each for about 2 minutes on each side.
  6. Remove fried beignets using a slotted spoon and place them on paper towels to drain excess oil.
  7. Dust warm beignets with granulated sugar or powdered sugar before serving.
