- Begin by mashing the bananas in a mixing bowl until smooth.
- Combine mashed bananas with granulated sugar, carnation milk, egg, kosher salt, baking soda, nutmeg, vanilla extract, and almond extract. Whisk until smooth.
- Gradually fold in all-purpose flour until the batter is similar to pancake mix, being careful not to overmix.
- Heat oil in a large frying pan over medium heat until it reaches between 325°F and 350°F.
- Drop spoonfuls of batter into the hot oil, frying each for about 2 minutes on each side.
- Remove fried beignets using a slotted spoon and place them on paper towels to drain excess oil.
- Dust warm beignets with granulated sugar or powdered sugar before serving.
