Ingredients
  

For the Casserole
  • 1 lb Ground Beef Can swap with ground chicken or turkey for a leaner option.
  • 1 medium Yellow Onion Diced finely.
  • 2 cloves Garlic Minced; or use 1 teaspoon garlic powder.
  • 1-2 Tbsp Chili Powder Adjust based on spice preference.
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Long-Grain White Rice Uncooked.
  • 1 can Canned Diced Tomatoes Undrained.
  • 1 can Chopped Green Chilies
  • 1 cup Beef Broth Can also use chicken broth.
  • 2 cups Shredded Colby Jack Cheese Can swap with cheddar or a Mexican cheese blend.
For Optional Toppings
  • 1 cup Shredded Lettuce
  • 1/2 cup Sour Cream
  • 1 medium Avocado or Guacamole
  • 1/4 cup Fresh Cilantro For garnish.

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. In a large skillet, cook the ground beef and diced yellow onion over medium-high heat for 7-8 minutes until browned.
  3. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Add chili powder, cumin, smoked paprika, oregano, salt, and pepper, and mix thoroughly.
  5. Add uncooked rice, canned diced tomatoes, chopped green chilies, and beef broth to the skillet and stir.
  6. Transfer the mixture to the casserole dish, cover with aluminum foil, and bake for 45-50 minutes.
  7. Remove the foil, fluff the rice after baking, and check doneness.
  8. Sprinkle cheese on top and bake uncovered for an additional 8-10 minutes.
  9. Let the casserole rest for 5-10 minutes before serving.
