Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke holes in each potato using a fork. Coat each potato in olive oil and sprinkle with salt and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes, until the skins are crispy.
  4. In a skillet over medium heat, cook ground beef until browned. Stir in taco seasoning and water, simmer for 10 minutes.
  5. In a saucepan, combine Velveeta cheese, pepper jack cheese, diced chilies, and evaporated milk over medium-low heat until smooth.
  6. Switch to broil and broil the potatoes for an additional 15 minutes to achieve a crispy finish.
  7. Remove baked potatoes, cut them in half, fluff the insides with a fork, and layer with cheese sauce and ground beef mixture. Add toppings.
