  • 2 cups Pasta (rotini or penne) Use any shape
  • 1 cup Cherry tomatoes Halved
  • 8 oz Fresh mozzarella Cubed
  • 6 oz Spicy salami Sliced, can replace with pepperoni or omit
  • 1/2 cup Pepperoncini Sliced
  • 1/2 cup Olives Kalamata or green, sliced
For the Dressing
  • 1/4 cup Olive oil Base of the dressing
  • 2 tablespoons Vinegar Red wine or balsamic
  • 1 clove Garlic Minced
  • 1 teaspoon Dried oregano Herbs for dressing
  • 1 teaspoon Dried basil Herbs for dressing

Method
 

Step-by-Step Instructions
  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the dressing by blending olive oil, vinegar, minced garlic, salt, oregano, and basil until smooth.
  3. In a large mixing bowl, combine cooled pasta with tomatoes, mozzarella, salami, and pepperoncini. Add olives and toss gently.
  4. Drizzle the dressing over the salad and gently mix to coat all ingredients evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving. Toss again gently before serving.
