  • 1 cup Fontina Cheese Can swap in mozzarella or Gouda.
  • 6 slices Turkey (sliced) Opt for deli turkey or leftover roast turkey.
  • 1 cup Roma Tomatoes Fresh ripe tomatoes work as a substitute.
For Grilling
  • 2 tablespoons Olive Oil For brushing on the bread before grilling.

Method
 

Step-by-Step Instructions
  1. Lay out slices of sourdough bread and spread basil pesto on each slice.
  2. On half of the slices, distribute the fontina cheese evenly.
  3. Place slices of turkey over the cheese on each prepared bread slice.
  4. Add slices of fresh Roma tomatoes on top of the turkey.
  5. Carefully place the reserved bread slices on top of the turkey and tomato layers.
  6. Brush both top and bottom surfaces of the assembled panini with olive oil.
  7. Preheat a skillet or panini press over medium-high heat and grill the panini for 3-4 minutes on each side.
  8. Once golden brown, remove from skillet, allow to rest, then slice in half to serve.
