Step‑by‑Step Instructions
  1. Pat the salmon fillets dry. Season with salt and pepper. Set aside.
  2. In a skillet, heat olive oil and butter over medium-high heat. Add salmon skin-side down and cook for 6-7 minutes.
  3. Sauté garlic and sun-dried tomatoes in the same skillet for 1-2 minutes.
  4. Deglaze the pan with dry white wine, scraping any browned bits. Simmer for about 5 minutes until reduced by half.
  5. Stir in heavy cream and Parmesan cheese until smooth. Add spinach and cook until wilted.
  6. Return salmon to the skillet, spoon sauce over, and simmer on low for an additional 5 minutes.
