  • 2.5 tablespoons Minced Shallots Can be substituted with red onion or green onions.
  • 1 large Carrot Peeled and grated.
  • 1 Green Onion Thinly sliced, optional.
  • Salt and Pepper Adjust according to taste preference.
  • Green Leaf Lettuce Optional for fresh crunch.
  • 4 slices Bread Any bread works, use gluten-free for a gluten-free option.

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine mayonnaise and lemon juice. Stir until smooth, adding salt and pepper to taste.
  2. Open chickpeas, drain and rinse. Mash half the chickpeas in a bowl for 1-2 minutes until chunky.
  3. Fold mashed chickpeas and remaining whole chickpeas into the dressing. Add shallots, carrot, and green onion. Mix well.
  4. Place lettuce on two slices of bread, top with chickpea salad mixture, and cover with remaining bread.
  5. Press down gently on the sandwiches and slice diagonally before serving.
