Base Ingredients
  • 1 can Rotel Tomatoes (undrained) Can substitute with any canned tomatoes with green chilies
  • ½ cup Heavy Cream Can substitute with half-and-half
  • ½ cup Diced Onion Can substitute with green onions
  • optional Chorizo Omit if preferred

  • ¼ cup Pickled Jalapeños Can substitute with fresh jalapeños
  • ½ teaspoon Cumin
  • ½ teaspoon Chili Powder

Method
 

Cooking Steps
  1. Sear the Steak: Heat olive oil in a cast iron skillet. Add cubed steak, season with spice rub, and sear for 5-7 minutes until browned. Set aside.
  2. Melt the Cheeses: Lower heat and add Velveeta, sharp cheddar, and pepper jack cheeses. Stir for 3-5 minutes until melted and smooth.
  3. Combine the Base Ingredients: Add Rotel tomatoes, heavy cream, and diced onion to the cheese mixture. Add optional chorizo and jalapeños. Mix and cook for 2-3 minutes.
  4. Add the Seasonings: Sprinkle in cumin and chili powder. Stir for 1-2 minutes until evenly distributed.
  5. Return the Steak: Fold seared steak into the cheese mixture. Cook on low heat for an additional 5 minutes.
  6. Serve and Enjoy: Transfer to a serving bowl and serve with tortilla chips or veggie sticks.
