Ingredients

  • 1 box Cake Mix White or Funfetti works beautifully
  • 1 cup Butter Softened
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract Pure vanilla is most flavorful
  • 1 few drops Green Food Coloring Gel recommended for vibrant results
For the Mint Filling
  • 1 cup Marshmallow Cream Can substitute with whipped cream
  • 2 cups Powdered Sugar Sift for smoother consistency
  • 1 splash Milk Whole milk preferred
  • 1 teaspoon Mint Extract

Method
 

Dough Preparation
  1. Beat the softened butter in a stand mixer until creamy, about 1-2 minutes. Add eggs and vanilla extract, and mix until combined. Gradually incorporate the cake mix until a soft dough forms. Add green food coloring to achieve desired shade.
Cookie Formation
  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoons of dough onto the sheet, spacing cookies 2 inches apart.
Baking
  1. Bake cookies for 8-10 minutes or until edges are lightly golden. Cool on wire rack for 5 minutes.
Mint Filling Preparation
  1. In a bowl, beat softened butter and marshmallow cream until creamy. Gradually add powdered sugar and mix. Stir in milk and mint extract for filling consistency.
Assembly
  1. Once cooled, pipe mint filling onto half of the cookies and top with the remaining cookies to create sandwiches.
