  • 1 tablespoon Dijon Mustard For tangy flavor
  • 1 large Onion Sauté until soft
  • 1 tablespoon Extra Virgin Olive Oil For sautéing
  • 4 medium Ripe Tomatoes Use fresh or canned
  • 2 cloves Garlic Slice thinly
  • 1 tablespoon Fresh Herbs Use thyme and basil
  • 1 teaspoon Herbes de Provence
  • to taste Salt For flavor
  • to taste Black Pepper For flavor

Method
 

Preparation Steps
  1. Sauté one large onion in 1 tablespoon of extra virgin olive oil over medium heat for 8-10 minutes until softened.
  2. Preheat your oven to 180°C (360°F).
  3. Wash and thinly slice ripe tomatoes, setting aside.
  4. Unroll the puff pastry onto a tart pan, pressing into corners and poking holes in the base.
  5. Spread a thin layer of Dijon mustard on the pastry base.
  6. Layer sautéed onions, sprinkle salt and Herbes de Provence, add sliced tomatoes, and thinly sliced garlic.
  7. Sprinkle remaining Herbes de Provence and add fresh herbs on top, drizzling with olive oil.
  8. Fold edges of the pastry inward and place the tart in the oven to bake for 40 minutes until golden.
  9. Cool for approximately 10 minutes before slicing and serving garnished with fresh herbs.
