Preparation Steps
- Sauté one large onion in 1 tablespoon of extra virgin olive oil over medium heat for 8-10 minutes until softened.
- Preheat your oven to 180°C (360°F).
- Wash and thinly slice ripe tomatoes, setting aside.
- Unroll the puff pastry onto a tart pan, pressing into corners and poking holes in the base.
- Spread a thin layer of Dijon mustard on the pastry base.
- Layer sautéed onions, sprinkle salt and Herbes de Provence, add sliced tomatoes, and thinly sliced garlic.
- Sprinkle remaining Herbes de Provence and add fresh herbs on top, drizzling with olive oil.
- Fold edges of the pastry inward and place the tart in the oven to bake for 40 minutes until golden.
- Cool for approximately 10 minutes before slicing and serving garnished with fresh herbs.
