  • 2 tablespoons Soy Sauce or gluten-free tamari
  • 1 teaspoon Five-Spice Powder or substitute with spices
  • 1 tablespoon Sesame Oil or vegetable oil
  • 5 sheets Rice Paper 22cm/8.6 inches
  • 100 grams Glass Noodles or rice vermicelli
  • 1 Carrot thinly sliced
  • 1 Cucumber thinly sliced
  • 1 Yellow Bell Pepper thinly sliced
  • 1 Red Cabbage thinly sliced
  • 1 cup Lettuce leafy greens
  • 1 handful Mint or basil
For the Peanut Sauce
  • 1/2 cup Peanut Butter creamy
  • 2 tablespoons Brown Sugar or maple syrup
  • 1 tablespoon Lime Juice or lemon juice
  • 1 tablespoon Rice Vinegar
  • 1/2 teaspoon Ginger Powder or fresh grated

Step-by-Step Instructions for Vegan Summer Rolls
  1. Marinate the Tofu: Press tofu, slice, and marinate with soy sauce, sesame oil, and five-spice powder for 15 minutes. Pan-fry for 5-7 minutes until golden brown.
  2. Prep the Fillings: Slice vegetables thinly. Soak glass noodles in boiling water for 3-5 minutes, then drain.
  3. Soak the Rice Paper: Submerge rice paper in warm water for 20-30 seconds until soft. Lay flat on a clean surface.
  4. Assemble the Rolls: Layer lettuce, veggies, glass noodles, tofu, and mint on rice paper. Leave space around edges.
  5. Roll Up the Filling: Fold the bottom of rice paper over filling and roll snugly without tearing.
  6. Make the Peanut Sauce: Mix peanut butter, brown sugar, soy sauce, lime juice, rice vinegar, and ginger powder. Adjust with warm water as needed.
  7. Serve Your Rolls: Cut rolls in half if desired, serve with peanut sauce for dipping.
