For the Mushroom Gravy
  • 1.5 tbsp Canola Oil Fat for sautéing; can use olive oil or vegan margarine.
  • 2.5 cups White and/or Cremini Mushrooms Add umami depth; substitute with other mushrooms for variety.
  • 2 cloves Garlic Minced.
  • 0.25 cup White Onion Chopped.
  • 3 tbsp All-Purpose Flour Thickening agent; can substitute with gluten-free flour.
  • 2 cups Vegetable Stock Use homemade or low-sodium for a lighter option.
  • 1 tbsp Light Soy Sauce Substitute with tamari for gluten-free.
  • 1 tsp White Miso Enhances umami flavor; can substitute with additional soy sauce.

Method
 

Cooking Steps
  1. Preheat your oven to 450°F (232°C).
  2. In a large pot, boil 1 to 1.5 pounds of potatoes until tender, about 15 minutes.
  3. Gently smash each potato to about ½ inch thick.
  4. Brush with olive oil and season with salt, then bake for 20 minutes until crisp.
  5. Sauté onion and garlic in canola oil until fragrant.
  6. Add mushrooms and cook until tender, about 5-7 minutes.
  7. Sprinkle flour over mushrooms, then add vegetable stock, soy sauce, and miso to make the gravy.
  8. Serve warm gravy over the crispy potatoes with optional toppings like cranberry sauce and thyme.
