Step-by-Step Instructions for Toasted Coconut Donuts
  1. Preheat your oven to 350°F (175°C) and spray your donut pan with cooking spray.
  2. Melt coconut oil in a skillet, add flaked coconut, and toast for about 5 minutes until golden brown.
  3. In a bowl, combine all-purpose flour, brown sugar, ground nutmeg, salt, baking soda, and baking powder. Whisk together.
  4. Melt vegan butter and mix it with ground flax seeds, water, and plant-based milk until fully combined.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  6. Fill each compartment of your donut pan about three-quarters full and bake for approximately 15 minutes.
  7. Mix powdered sugar with additional plant-based milk until smooth for icing.
  8. Once cooled slightly, dip the tops of the donuts into the icing and sprinkle toasted coconut on top.
