Ingredients
  

For the Dressing
  • 1 cup Plain Greek Yogurt or dairy-free yogurt
  • ½ cup Mayonnaise or vegan mayonnaise
  • 3 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoon Paprika
  • to taste Salt
  • to taste Black Pepper
  • ½ teaspoon Garlic Powder
  • 2 tablespoons Lime Juice & Zest
For the Salad
  • 8 ounces Ditalini Pasta substitute with any small pasta
  • 1 pound Mild Italian Chicken Sausage or omitted for vegetarian
  • 1 cup Corn Kernels fresh or frozen
  • 1 Red Bell Pepper chopped
  • 1 Fresh Jalapeño diced
  • ½ cup Red Onion diced
  • 1 can Black Beans drained
  • ½ cup Fresh Cilantro chopped
  • 1 Avocado diced
  • ½ cup Crumbled Cotija Cheese or omitted for dairy-free

Method
 

Step-by-Step Instructions
  1. In a medium bowl or mason jar, whisk together the dressing ingredients until smooth. Set aside.
  2. Bring a large pot of salted water to a boil, then add the ditalini pasta. Cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  3. In a large skillet over medium heat, cook the chicken sausage until browned. Remove from heat and let cool.
  4. Heat olive oil in a separate pan and add corn, red bell pepper, and jalapeño. Cook until corn is charred and tender. Let cool.
  5. In a large mixing bowl, combine the cooled pasta, charred corn mixture, cooked sausage, onion, beans, cilantro, and avocado. Mix well.
  6. Drizzle the dressing over the salad and toss gently to coat. Adjust seasoning if needed.
  7. Cover and chill for at least 1 hour before serving. Toss gently before serving.
