Preparation Steps
- Rinse lemons and fresh ginger. Cut lemons in half and extract ½ cup juice using a lemon squeezer. Grate ginger without peeling it.
- In a mixing jar, combine grated ginger, sugar, and kosher salt. Add lemon juice and 1 cup of chilled water. Stir until sugar dissolves.
- Place a strainer over a pitcher, pour the lemon-ginger mixture into it, pressing down on the solids to extract juice.
- Add 4 cups of chilled water to the pitcher and stir. Serve over ice with fresh mint leaves as garnish.
