Step‑by‑Step Instructions
  1. Slice the zucchini into 1/2-inch rounds and toss with oil, salt, and pepper. Broil for 3-4 minutes per side until browned.
  2. Zest the lemon and mix with ricotta, lemon zest, and red pepper flakes in a bowl. Season with salt and pepper.
  3. Preheat oven to 400°F. Place naan on a baking sheet, layer with zucchini, ricotta mixture, mozzarella, and parmesan.
  4. Bake for 8-12 minutes until cheese is bubbling and edges are crispy.
  5. Remove from oven, garnish with fresh herbs and squeeze lemon juice over before serving.
